This portion has long been seen as the most prized cut for its rich and succulent flavour. Best grilled, pan-fried or broiled. The texture is tender and fine, definitely a treat.

Item can be slightly thawed upon receiving to be portioned accordingly before being stored in the freezer for up to 2 months. Once fully thawed, do consume within the same day. As the collar may contain some sharp edges, do note that they may poke through the vacuum bags some times but that does not affect the quality of safety of the product. There may also be some scales left on the collars.
