The flesh is moist, buttery, and tender, with firm medium-sized flakes like haddock. The firm texture also lends itself to a wide variety of cooking methods, be it steamed, grilled, baked or pan-fried. Our fillets contain minimal to no bones as our 9s crew will remove the bones that they can see and feel. However, there may still be small pin bones hidden in between the flesh which we may not be able to spot, so we will advise to exercise caution before feeding young children or the elderly! Do note that the natural colour of the sea bass fillet is slightly greyish. This does not indicate a defect nor is it an indication that the fish is not fresh. That is the natural colouring of fresh sea bass fillet.
