Glucono Delta-Lactone (GDL) is a white odorless crystalline powder. It can found in honey, fruit juices, and many fermented products. It’s commonly used as a coagulant in tofu production, leaving agent in bakeries, mild acidifier in cheese and meat product, and a sequestrant in some food applications.
