In Bahasa Indonesia, the term ‘kueh lapis’ literally translates to ‘sweet layer cake’. While this sweet treat originated in Indonesia, kueh lapis is popular in neighbouring countries like Malaysia, Brunei and Singapore too, so you can find this cake at a local bakery or available for online delivery!
You may have heard of two types of kueh lapis – kueh lapis legit and kueh lapis sagu. But how are they different? The kueh lapis legit, which originates from Indonesia, is most commonly eaten as a Hari Raya treat in Singapore. Also known as Indonesian layer cake or Spekkoek, the kueh lapis legit is more like a cake than a glutinous rice kueh. It is made of flour and baked into a puffy layered cake – almost like a mille crepe! It is usually yellow and brown in colour due to the batter mixes and cocoa powder used. Sometimes, the layers are dyed in different colours to become a rainbow kueh lapis legit.
Meanwhile, kueh lapis sagu (also known as nine-layer kueh) is more of a glutinous rice kueh than a cake. This nonya kueh has to be steamed gradually, where the layers are subsequently added in an alternate order to avoid different colours mixing together. This gives the kueh lapis sagu its layered pattern and bouncy gelatin-like texture which is sticky and chewy.
