Homemade ricotta cheese recipe

The best way to enjoy ricotta cheese is to make it from scratch — so you can enjoy it at its freshest. It may sound daunting to make cheese yourself, but this recipe is simple and easy to follow! All you’ll need is three ingredients: whole milk, lemon juice and salt. Alternatively, you can replace lemon juice with white vinegar (available on Shopee Supermarket), which would make ricotta cheese that pairs better with savoury ingredients.

Pro tip: Avoid using skim milk (available on Shopee Supermarket) or non-fat milk as they do not separate easily into curd and whey. Also note to avoid milk labeled “UHT”, which refers to ultra-pasteurised milk which is unsuitable for ricotta cheese recipes.

Prep time: 10 minutes
Cook time: 20 minutes

Recipe ingredients:

  • 2.3L whole milk
  • ⅓ cup lemon juice
  • Salt to taste (optional)

Recipe instructions:

  1. Heat up the whole milk (available on Shopee Supermarket) in a pot over medium heat and let it steam, giving it an occasional stir. When it gets foamy and little bubbles start to form on the edge of the pan, remove it from the heat. This typically takes about 20 minutes. If you have a kitchen thermometer (available on Leifheit Official Store), monitor the temperature and heat it to 85 degree celsius.
  2. Add salt and lemon juice squeezed from approximately 2 lemons (available on Shopee Supermarket) and stir gently
  3. Cover the pot with a lid and let the mixture sit for 20 minutes
  4. Once done, use a spoon to dip in and check if the milk has separated into milky white curds and yellow whey. If it does not curdle, add an additional tablespoon of lemon juice.
  5. Scoop out large curds with a slotted spoon (available on Brund by SCANPAN Official Store) into a strainer lined with cheesecloth (available on EAT ORGANIC) with a bowl underneath.
  6. Pour the remaining curd and whey through the strainer and leave it to drain. For an easy-to-spread consistency, drain it for 3-5 minutes. Use immediately or store it in the refrigerator for up to three days.
