Yummy Lotus Biscoff cake recipes for Valentine’s Day

1. No-bake Lotus Biscoff Tiramisu

Marrying both the love for coffee and Lotus Biscoff, the Biscoff tiramisu recipe is a classic for a homemade Valentine’s Day dessert. If your S/O is not one with a sweet tooth, you can reduce the sugar amount and rely on the Lotus Biscoff biscuits for a hint of sweetness instead!

Cook time: 3 hours
Servings: 3 – 5 pax

Biscoff recipe ingredients:

  • 250ml espresso + 30g sugar
  • 3 egg yolks
  • 80g sugar
  • Salt
  • 2ml vanilla essence
  • 300g mascarpone cheese
  • 400ml whipping cream
  • 30g powdered sugar
  • 250g Lotus Biscoff biscuits
  • Cocoa powder

Recipe instructions:

  1. Using a coffee machine and Boncafe Espresso Ground Coffee (available on Shopee Supermarket), brew your espresso. Add 30g sugar and stir well.
  2. Create a double boiler off the stove with a large and medium mixing bowl. Pour hot water into the large mixing bowl such that the base of the medium bowl is submerged.  Add egg yolks, RedMan Caster Sugar, Bake King Vanilla Essence (both available on Shopee Supermarket) and a pinch of salt. Whisk everything together until creamy.
  3. Remove the medium bowl and set it on a kitchen towel (available on Shopee Supermarket). Whisk in Zanetti Mascarpone Cheese (available on Shopee Supermarket) until well combined.
  4. In a separate bowl, whip the Payson Breton Whipping Cream and powdered sugar with the PowerPac Hand Mixer (both available on Shopee Supermarket) for 6 to 7 minutes until you’ve reached ‘soft peaks’.
  5. Pour the whipped cream into the mascarpone mixture and stir everything together
  6. Dip the Lotus Biscoff Biscuits (available on Shopinshop_korea.kr) into your espresso and lay them in a baking dish. Once done, add a 5cm layer of the tiramisu mixture over the biscuits. Add another layer of Lotus Biscoff biscuits and fill up the rest of the baking dish with tiramisu mixture.
  7. Refrigerate the tiramisu for 2-3 hours
  8. Thereafter, sprinkle Hershey’s Cocoa Powder (available on Shopee Supermarket) all over the surface of the tiramisu before serving. For something extra special, sprinkle the cocoa powder over a heart-shaped stencil (available on Tomorrowlife.sg).

2. Lotus Biscoff Cupcakes

Servings: 12 cupcakes

Biscoff recipe ingredients:

Cupcakes

  • 150g unsalted butter
  • 150g brown sugar
  • 3 medium eggs
  • 150g self-raising flour

Buttercream

  • 150g unsalted butter
  • 300g icing sugar
  • 200g Lotus Biscoff spread
  • 2 tbsp boiling water

Decoration

  • Lotus Biscoff spread
  • Lotus Biscoff biscuits

Recipe instructions:

  1. Preheat oven to 180 degrees celsius and prep 12 cupcake cases
  2. Beat the SCS Unsalted Butter with RedMan Brown Sugar (both available on Shopee Supermarket) until fluffy. Then, add eggs and RedMan Self-Raising Flour (available on Shopee Supermarket) and beat the mixture until well combined.
  3. Distribute the cupcake batter evenly with the ANAEAT Stainless Steel Ice Cream Scoop (available on Anaeat Official Store), placing one scoop per cupcake case
  4. Bake the cupcakes in the oven for 20 minutes. Poke a skewer into one of the cupcakes and check that it comes out clean – this means it’s ready! Once done, take the cupcakes out and set them aside to cool.
  5. To make the buttercream, beat the butter with an electric mixer for about 2 minutes
  6. Add SIS Icing Sugar (available on Shopee Supermarket) on slow speed until well combined. Increase the speed of the mixer for 4 minutes.
  7. Pour in the Lotus Biscoff Biscuit Spread Smooth (available on Shopee Supermarket) to the buttercream and continue mixing for 5 minutes until whipped. You may need to add boiling water if the mixture hardens.
  8. Transfer the buttercream to the RedMan Piping Bag (available on Shopee Supermarket) and decorate the cupcakes. Psst, you can even draw “I love you, boo!” with each character on one cupcake – that makes 12 of them! Crumble the Lotus Biscoff biscuits and sprinkle them over the cupcakes for a finishing touch. Biscoff recipe ingredients:

Crust

  • 250g Lotus Biscoff biscuits
  • 6 tbsp butter, melted

Filling

  • 2½  cups cream cheese
  • 200g Lotus Biscoff spread
  • 240ml whipping cream, cold
  • 85g powdered sugar
  • 1 tsp vanilla extract
  • 14g gelatin powder
  • 70ml water

Topping

  • 200g Lotus Biscoff spread
  • 4 Lotus Biscoff biscuits, crushed

Recipe instructions:

  1. To make the crust of the cheesecake, crush the Lotus Biscoff biscuits in the Ninja Food Processor (available on Ninja Kitchen Shark Clean Official). Alternatively, this step can be done by crushing the biscuits in a Ziploc Sandwich Bag (available on Shopee Supermarket).
  2. Add melted butter into the food processor and pulse until combined. Press the crust into the bottom of a nine-inch springform pan using the back of a spoon. Refrigerate the crust while doing the next few steps.
  3. Start making the filling by stirring gelatin powder and water in a small bowl. Allow the mixture to bloom for 10 minutes.
  4. In a large bowl, beat Philadelphia Cream Cheese (available on Shopee Supermarket), vanilla extract and Lotus Biscoff spread until the mixture becomes soft and smooth
  5. Beat whipping cream with powdered sugar in a separate bowl until medium-stiff peaks form
  6. Fold the whipped cream into the cream cheese mixture (step four)
  7. Melt the gelatin powder (step three) in the microwave for 15 seconds. Add a few tablespoons of the cheesecake mixture into the dissolved gelatin and keep stirring to combine everything.
  8. Transfer the mixture in step seven back into the remaining cheesecake mixture (step four) and mix until combined
  9. Pour everything into the springform pan, covering the biscuit crust. Freeze for 30 minutes.
  10. While waiting, prepare the toppings. Melt the Lotus Biscoff spread in the microwave and pour the liquidy spread all over the cheesecake when it is done freezing.
  11. Place the cake back into the refrigerator for at least 6 hours to set it. Once done, release the Biscoff cheesecake from the pan and garnish with crushed cookies.

  • ¼ cup condensed milk
  • ½ cup thick cream

Recipe instructions:

  1. Melt the Lotus Biscoff spread over hot water (double boiler) or in a microwave (for 45 seconds) until liquidy
  2. Dip each Lotus Biscoff biscuit in warm milk and layer it in a pudding tray. Set aside.
  3. Pour whipping cream into a large bowl and whip using an electric mixer. Add vanilla, essence, condensed milk, thick cream and some of the melted Biscoff spread. Mix well.
