- Begin by measuring out the Darjeeling tea leaves (available on S-Mart) in a bowl. Add just enough boiling water to the bowl until the leaves are covered. Let it sit.

- Cover and let steep for five minutes, then strain the tea leaves. Sweeten with honey to taste and let cool in the fridge while you cook the tapioca pearls.
